Healthy Roasted Sweet Potato

I love to cook and definitely love to eat! When I’m meal prepping for the week, I like to mix up my vegetables so it’s not so boring or bland. I’ve seen so many meal prepping meals that are just plain. If you love sweet potatoes and baby potatoes, here’s a quick little recipe that you can make on your own in 15 minutes.
The things you’ll need for this recipe is:

  1. One sweet potato
  2. PeeWee potatoes or any type of baby potatoes Olive Oil
  3. Sea Salt/pepper (2 tbsp)
  4. Peeler
  5. Oven pan
  6. Chopping knife

Before you start peeling your sweet potato, go ahead and preheat your oven to 450°.

Healthy Roasted Sweet Potato

Wash your sweet potato and PeeWee potatoes, pat dry. Peel your sweet potato then chop them into 1/2-1 inch cubes. Cut your PeeWee potatoes in halves.

On the oven pan or in a bowl, combine the sweet potato cubes and PeeWee halves, add the olive oil, your sea salt and pepper and then mix to coat all the potatoes.

Healthy Roasted Sweet Potato

Bake, uncovered, for about 10-12 minutes or until potatoes are tender and slightly golden brown. While in the oven, stir once or twice during cooking.

Remove from the oven and let cool for a few minutes before you enjoy.

Best part about this, is that it’s delicious and healthy! Of course, you can add whatever spices you want to this mixture.

I’ve also just made roasted sweet potatoes cubes with just olive oil and my super cute Yorkie Romeo love it as a snack.
